Brine No. 004

Singularity Swirl Brine

Tangy-Fiery — bright heat with sour undertones

Umami + citrus zing + heat.

Best For: Cucumbers (primary); also daikon, radish, bell pepper.
Ideal Cucumber Shape: Ribbons or long diagonals.

Ingredients

  • 1 cup rice vinegar
  • ½ cup tamarind paste + water
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 tbsp salt
  • 1 tsp ginger
  • 1 Thai chili
  • Lime zest
  • 1 tsp sesame oil

Preparation

  1. Slice cucumbers into thin ribbons or long diagonals.
  2. Pack into jars with chili and lime zest.
  3. Simmer brine ingredients until tamarind dissolves.
  4. Pour warm brine over packed cucumbers.
  5. Seal and chill.
