On the Matter of Panicking
The single most useful object a brine maker can carry across the galaxy is not a recipe, a thermometer, or even a jar. It is a calm disposition and a reliable supply of salt. Everything else can be improvised, retrieved, or fermented into submission.
This Guide exists because somewhere between the grocery store and the heat death of the universe, you will lose your recipe card. The cover therefore says DON'T PANIC in large, friendly letters — a policy this volume endorses without reservation, and one that has saved more cucumbers than any refrigerator ever built.
