Ingredients
- 1 cup rice vinegar
- 1 cup coconut water
- 2 tbsp kosher salt
- 1 tbsp sugar
- 1 tsp white pepper
- 6 fresh mint sprigs
Preparation
- Slice cucumbers into thin rounds or spiralized ribbons.
- Pack tightly into a sterilized jar with fresh mint sprigs layered throughout.
- Bring vinegar, coconut water, salt, sugar, and pepper to a simmer until salt dissolves.
- Let cool slightly, then pour brine over cucumbers to fully submerge.
- Seal and refrigerate.
